It's such a coinscidence that im reading this today when i was doing some background reading on "attraction, affiliation and love". The topic of "attraction in the workplace" came up.

no, just kidding. do the right thing - she is just using you and its not going to last. besides the more important thing here is your career is at stake and ALSO you are already in a relationship which it seems you value very much otherwise you wouldnt be wondering how to get out of this trap.
i'd say, record it and save your career, your relationship and your self respect. just be careful of the way you do it. be cool, not anxious when you record it if you decide to do it that way.
