HBO has to have one of the best (if not THE best) track records for creating new series', with all of the great shows, past & present. Besides being home to my favorite series of all time, Oz, it also is home to my favorite series on tv right now, Deadwood. What HBO can get away with is all due to the fact that they don't have to sacrifice anything because they're not on a major network like NBC, ABC, or CBS, and that's what I love. Pure, unapologetic (sp?), raw series. Here's a list of past & present HBO series I either own on tape, DVD, or watch religiously:

I haven't been able to get into their new series, Rome, and I never really liked Curb Your Enthusiasm or Sex in the City, but the good thing about HBO, is that it seems they'll try almost ANYTHING at least once, so there's always something different on that network.
