The solution is to buy more expensive soy sauce. It's only the cheaper stuff that contains this, due to being fermented with hydrochloric acid to speeden up the fermenting process and maximise profits.

I had a similar experience at a Chinese restaurant in Vancouver, after we performed in a club and went out to eat. I imagine the crowds in Seattle and Vancouver are pretty similar.
