I was thinking, we got at "Get into shape" thread, why not make a thread with your favorite recipes, but not necessarily dieting food.

I mean, lard covered cheese cakes with bacon bits on top isn't great, but...


I'll start.

I make a good chicken and rice casserole using just two chicken breasts, a can of cream of chicken, some onion dip mix and, of course, rice.

I mix the soup, instant rice (uncooked) and water together and put it in a baking pan. Place the frozen chicken pieces in it, and then coat them with the onion dip mix and mix them together. In the over for an hour and a half at 350.
 
I make a killer Vegan Huevos Rancheros.

What you need:

Tofu
Tofu Scrambler Seasoning Mix
Crispy Tortillas
Onions
Olives
Jalapenos
Peppers
Tomatoes
Refried Beans
Daiya Cheese
Guacamole
Salsa
Lettuce

You put the drained tofu block in a big bowl and mash it up with a fork. It'll crumble into the consistency of scrambled eggs. Then mix it with the seasoning and fry it in some olive oil or vegetable oil. Throw in the chopped tomatoes, jalepenos, onions, olives and peppers in with the tofu and fry it all together.

Heat up the refried beans, spread evenly over the tortillas, then put the fried scrambled tofu/veggies mix on top of that, grate up the Daiya cheese on top of that so it melts, serve with lettuce, salsa and guacamole on the side.

Boom. Healthy delicious breakfast with a fraction of the calories of a traditional dairy huevos rancheros.

You could even fry up some tofurkey, soy ham, or veggie bacon to go with it.

Ive got to try this. How much water? You put the chicken in frozen? Id have though marinating it unfrozen would be better. I rarely freeze food I like to eat it fresh.
 
Drop-Dead Delicious Blueberry Pudding

2 cups blueberries
2 cakes tofu, cut into 1/2 inch slices
3 tablespoons agave or other sweetener
1/2 teaspoon vanilla extract
dash cinnamon

In a blender, combine the blueberries, tofu, agave, vanilla, and cinnamon, and puree for 30-45 seconds.
Pour into 4 dessert cups.
Chill before serving.

This works well with all types of berries, and mangoes too.

Depends on how much rice you use. I cook rice all the time and so I usually just eyeball the right amount. It's worked out fine for me all the time. If there's a thin layer of water at the end (remember, you cook with aluminum foil covering it) then I set the oven to broil an remove the foil and do it for five minutes. Usually, if there's water left over, the chicken is fulled cooked, but still pretty moist on the outside, so this also crisps the chicken a bit as well.

And yeah, I was a bit lazy this time and didn't wait to defrost it. It works fine though.
 
Oh my fuck, just finished the other half of the casserole for lunch and it was just as good microwaved as it was baked last night.

Yes it does. My wife makes all kinds of delicious puddings, cakes and desserts with tofu.

Much better than using disgusting unfertilized chicken ovums and calf-growth fluid.
 
Ah ok, so it is eggs and milk in real pudding.

Hahahaha this always happens to me. Usually I just suck it up and eat the cake because the person offering is a mom and I can't bring myself to be a dick to such a sweetheart.
 
Marinated grilled shrimp (is how I modify it)

3 cloves garlic minced (more garlic)
1/3 cup olive oil (less oil...bc it doesn't mix well with the tomato sauce)
1/4 cup tomato sauce (I just fresh tomato in the food processor bc I rarely have canned foods)
2 tablespoons red wine vinegar
2 tablespoons chopped fresh basil (more basil)
1/2 teaspoon salt
1/4 teaspoon cayenne pepper (depending on who I'm cooking for I add more cayenne.)
2 pounds fresh shrimp, peeled and deveined (I've used frozen shrimp before...works as long as you don't overcook it)
skewers (if you want to serve them on skewers...I don't usually bc it's a pain in the a.)

In a large bowl, stir together the garlic, olive oil, tomato sauce, and red wine vinegar. Season with basil, salt, and cayenne pepper. Add shrimp to the bowl, and stir until evenly coated. Cover, and refrigerate for 30 minutes to 1 hour, stirring once or twice.
Preheat grill for medium heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade.
Lightly oil grill grate. Cook shrimp on preheated grill for 2 to 3 minutes per side, or until opaque.

If you double the recipe you can use the marinade as a sauce and put it over rice or pasta.
